Homemade Yogurt!

Yogurt is an ancient food that is all the rage today. It's one of the exceptions to the rules of the ketogenic diet because whereas milk is verboten, yogurt made from milk can be okay. The fermentation process eats the lactose (sugar) in the milk. How cool is that? It's easy enough to buy commercially prepared yogurt - just watch the labels and don't buy yogurt with added fruit or sugar - but it's pretty easy to make as well. Here's a quick look at the process we use around here. It's not comprehensive but might be a good jumping off place if you want to try it yourself. While we incorporate the yogurt incubating feature on our Excalibur Dehydrator, you really need almost no equipment for make yogurt. Again, folks have been doing for centuries. Even without Amazon!

Keto Casserole, Ground Beef and Mozzarella

Here's a simple recipe that I adapted from one of my favorite low carb recipe sites, Linda's Low Carb Menus & Recipes. I say adapted because I used products I had on hand (mozzarella instead of cheddar, fresh peppers instead of canned chiles, etc.,) I've previously made the dish to her exact specifications and it turned out wonderfully Lovely Mate gave a thumbs up to today's version.

Keto Casserole Recipe


Hamburger & Mozzarella Casserole

Crust:
  •   cream cheese 4 oz
  •   eggs 2
  •  taco seasoning 1/2 tsp
  •  mozzarella cheese 8 oz
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Filling:
  •  ground beef 1 lb
  •  taco seasoning 3 tsp
  •  tomato sauce 1/4 cup
  •  sliced peppers 1.25 oz
  •  mozzarella cheese 8 oz

Blend crust ingredients. Spread into casserole dish (about 8x10 or equivalent)

Bake @ 350º for about 20 minutes. Let cool for 10 minutes

Brown ground beef and add taco seasoning, tomato sauce, sliced peppers. Place on cooled crust.

Sprinkle remaining 8oz mozzarella cheese on top, bake for about 20 minutes more. Enjoy!

Taco Seasoning Ingredients:

  •  chili powder 2 TBLS
  •  onion powder 1 TBLS
  •  salt 1 TBLS
  •  paprika 5 tsp
  •  cumin 4.5 tsp
  •  garlic powder 2.5 tsp
  •  cayenne 1/8 tsp

Butter in My Coffee? (Does She or Doesn't She?)

You may have heard about folks incorporating more fat in their diets by adding butter and coconut oil to their coffee or tea. Some call it butter coffee and has been popularly known as bulletproof coffee. It sounds odd to put butter in your coffee, right? Of course, butter is essentially cream, churned into semi-solid form. Still, weird sounding.

I like the concoction (see how I make it below). But I don't drink it often. In this quick clip I explain why.

How I Make My Buttered Coffee:

[I brew coffee from freshly ground beans and use a Chemex Coffeemaker but any type will do]

1.5 ounces coffee
16 ounces water. Pour over and steep for about 4 minutes
28g Kerrygold butter (that's about an ounce by weight)
28g coconut oil
28g Jordan's Skinny Gourmet salted caramel syrup
blend it all up until as frothy as you like.

Nutrition info: 442 calories, 50g fat, 0 carbs, 0 protein
